Coconut Chia Banana Bread | Gluten Free | Paleo | Sugar Free

As a mother to twin boys I need to make foods that not only nourish but also leave my boys feeling satisfied! 

I am a proponent of lots of fresh fruits and veggies as well as roasted and cooked veggies during the cold winter months. However my twin toddlers require so much value in the way of food that I have begun to make meals or foods that offer as much healthy filling as possible. 

This coconut, chia, banana, bread is sugar free and gluten free. It has zero yeast or starters of any kind; it is a dense bread and meant to be dense, filling, nourishing, and satisfying. 

This recipe will allow you to use the bread as either a savory or a sweet bread for anything from avocado open faced sandwiches to good ol’ fashioned PB&J. Although I only use either sprouted almond butter or sunflower butter for my little gents. Always organic, of course.

Below is this awesome, super simple recipe where you will spend most of your time waiting for the bread to be done and peering inside the stove window. 

I do not have bread tins so I opted for my cake tin lol hence the round look - I am ok with that. Use what you have - make it simple and enjoy the process. ;-) 

The kitchen is all about creativity! Give it a go and make due with what you have. I made this recipe up after read a bunch of recipes online and after looking at my ingredients on hand this is what I chose to create! I had a lot of fun and even my twins helped me make it! 

Coconut Chia Banana Bread Recipe:

2 Cups Organic Coconut Flower 

¼ Cup Organic Freshly Ground Chia Seeds

2 TBL Organic or Wild Mesquite Powder 

1 TBL Organic Ground Vanilla Bean Powder

1 TBL Organic Stevia Powder (the actual leaf ground - so it is green in color)

½ tsp Finely Ground Celtic Sea Salt

4 Eggs from Organic Pasture Raised Hens

2 Large Organic Bananas

½ - 1 Cup Spring Water (to get dough like consistency) 

â…› Cup Organic Coconut Oil

Instructions: 

Preheat Oven to 350 

Grease Baking Tin with Coconut Oil and Put Aside 

Mix All Dry Ingredients In One Bowl

Mix All Wet Ingredients In NutriBullet or Blender Then Slowly Stir Into Dry Mix

Need with Your Hands Until Dough Like Consistency is Reached

Place Into Baking Tin and Bake for 30 - 45 Min or Until Knife Test Is Passed

Let Cool for 20 - 30 Min (if you can)
